Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
In a large saucepan, bring water to a boil and cook the chicken breasts until fully cooked, about 15-20 minutes. Remove the chicken, shred it, and set it aside. Reserve 1 cup of the chicken cooking water if desired.
In a large skillet over medium heat, melt the butter. Add the diced onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
