Ingredients

  • 1.5 cups Arborio rice
  • 4 cups Chicken or vegetable stock
  • 0.5 cups Dry white wine
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, finely diced
  • 2 cloves Garlic, minced
  • 0.5 cups Grated Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 1 tablespoon Fresh parsley, chopped (optional)

Directions

Step 1

Begin by warming the chicken or vegetable stock in a medium saucepan over low heat. Keep it warm but not boiling.

Step 2

In a large skillet or heavy-bottomed saucepan, heat the olive oil and 1 tablespoon of the butter over medium heat.

Step 3

Add the finely diced onion and cook for 3-5 minutes, or until softened and translucent. Stir occasionally to prevent browning.

Step 4

Add the minced garlic and cook for 1 minute until fragrant.

Step 5

Stir in the Arborio rice, ensuring each grain is coated in oil and slightly toasted, about 1-2 minutes.

Step 6

Pour in the dry white wine and stir continuously until it is mostly absorbed by the rice.

Step 7

Begin adding the warm stock, one ladleful (about 1/2 cup) at a time, while stirring frequently. Wait until each addition of stock is almost fully absorbed before adding the next. This process will take about 20-25 minutes.

Step 8

Taste the rice after 20 minutes to check for doneness. The grains should be tender with a slight bite (al dente) in the center.

Step 9

Once the rice is cooked to your desired texture and all the stock is absorbed, turn off the heat.

Step 10

Stir in the remaining tablespoon of butter and the grated Parmesan cheese. Mix well until creamy.

Step 11

Season with salt and freshly ground black pepper to taste.

Step 12

If desired, garnish with chopped fresh parsley and serve immediately.
