Ingredients

  • 1.5 cups Long-grain white rice
  • 2.5 cups Vegetable broth
  • 2 cups Fresh spinach leaves
  • 0.5 cups Fresh parsley
  • 0.5 cups Fresh cilantro
  • 2 cloves Large garlic cloves
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.25 teaspoons Black pepper
  • 2 stalks Green onion, sliced

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Drain and set aside.

Step 2

In a blender or food processor, combine the spinach, parsley, cilantro, garlic cloves, lime juice, and 1 cup of the vegetable broth. Blend until smooth. Set the mixture aside.

Step 3

Heat the olive oil in a medium-sized pot over medium heat. Add the rinsed rice and sauté for about 2-3 minutes, stirring frequently, until the rice begins to turn golden and aromatic.

Step 4

Pour the green herb mixture into the pot with the rice. Stir well to coat the rice evenly.

Step 5

Add the remaining 1.5 cups of vegetable broth, salt, and black pepper. Stir to combine and bring the mixture to a boil.

Step 6

Once boiling, reduce the heat to low, cover the pot, and let the rice simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.

Step 7

Remove the pot from heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork.

Step 8

Sprinkle the green onion slices on top as a garnish before serving for an extra pop of flavor and freshness.
