  • 240 g All-purpose flour
  • 115 g Unsalted butter, cold and cubed
  • 50 g Granulated sugar
  • 1 pinch Salt
  • 2 large Egg yolks
  • 2 tbsp Cold water
  • 500 g Ricotta cheese, drained
  • 100 g Powdered sugar
  • 1 tsp Vanilla extract
  • 1 tsp Lemon zest
  • 2 large Eggs
  • 1 tbsp All-purpose flour (for dusting the crust)

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a 9-inch springform pan.

In a mixing bowl, combine all-purpose flour, granulated sugar, and a pinch of salt. Add the cold, cubed butter and use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
