Ingredients

  • 1.5 pounds Ground beef
  • 0.5 pounds Ground pork
  • 1 cup Breadcrumbs
  • 0.25 cup Milk
  • 2 large Egg
  • 0.5 cup Yellow onion, finely chopped
  • 2 cloves Garlic, minced
  • 0.25 cup Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Ricotta cheese
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh basil, chopped (optional)
  • 0.5 cup Shredded mozzarella cheese
  • 0.25 cup Parmesan cheese, grated
  • 1 teaspoon Olive oil (for greasing the pan)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or baking sheet with olive oil.

Step 2

In a small bowl, combine the breadcrumbs and milk. Let the mixture sit for 5 minutes to soften.

Step 3

In a large mixing bowl, combine the ground beef, ground pork, softened breadcrumb mixture, eggs, chopped onion, garlic, ketchup, Worcestershire sauce, salt, and black pepper. Mix until well combined but do not overwork the meat mixture.

Step 4

In another small bowl, mix the ricotta cheese, parsley, basil (if using), mozzarella cheese, and Parmesan cheese until smooth. Set aside.

Step 5

On a large piece of parchment paper or plastic wrap, spread the meat mixture into a rectangle approximately 10 x 12 inches.

Step 6

Spread the ricotta mixture evenly over the meat rectangle, leaving about 1 inch of space around the edges.

Step 7

Using the parchment paper or plastic wrap to assist, carefully roll the meat mixture into a log, starting from the shorter end. Pinch the seams to seal and ensure the roll is tight.

Step 8

Transfer the meatloaf to the prepared pan, seam-side down.

Step 9

Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).

Step 10

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm and enjoy!
