Ingredients

  • 4 cups Fresh spinach leaves
  • 1 cup Ricotta cheese
  • 4 oz Cream cheese, softened
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Mozzarella cheese, shredded
  • 2 Garlic cloves, minced
  • 1 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 4 cups Tortilla chips or pita chips

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, warm the olive oil. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 3

Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove the skillet from heat and let the spinach cool slightly. Once cooled, finely chop the spinach and set aside.

Step 4

In a mixing bowl, combine the ricotta cheese, softened cream cheese, grated Parmesan cheese, shredded mozzarella cheese, salt, black pepper, and red pepper flakes (if using). Mix until smooth and well combined.

Step 5

Fold the chopped spinach into the cheese mixture, ensuring it is evenly incorporated.

Step 6

Transfer the mixture into an oven-safe baking dish and spread it out evenly.

Step 7

Bake in the preheated oven for 15-20 minutes, or until the dip is hot and bubbly, and the top starts to turn a light golden brown.

Step 8

Remove the dish from the oven and let the dip cool slightly for 5 minutes before serving.

Step 9

Serve warm with tortilla chips or pita chips on the side. Enjoy!
