Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 2 tablespoons Granulated sugar
  • 1 large Ripe banana
  • 0.5 cup Ricotta cheese
  • 2 large Eggs
  • 0.5 cup Milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter (for cooking)

Directions

Step 1

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and granulated sugar. Set aside.

Step 2

In another bowl, mash the ripe banana until smooth. Add the ricotta cheese, eggs, milk, and vanilla extract. Whisk until fully combined.

Step 3

Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are fine.

Step 4

Heat a non-stick skillet or griddle over medium heat and add a small amount of unsalted butter to coat the surface.

Step 5

Scoop about 1/4 cup of batter onto the skillet for each pancake. Use the back of the ladle to slightly spread the batter into a round shape.

Step 6

Cook until bubbles form on the surface of each pancake and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, or until golden brown and cooked through.

Step 7

Repeat with the remaining batter, adding more butter to the skillet as needed.

Step 8

Serve the pancakes warm with your favorite toppings such as maple syrup, sliced bananas, whipped cream, or a dusting of powdered sugar.
