Ingredients

  • 400 grams All-purpose flour
  • 50 grams Granulated sugar
  • 7 grams Salt
  • 7 grams Instant yeast
  • 250 milliliters Whole milk
  • 50 grams Unsalted butter
  • 1 large Egg
  • 1 Egg yolk (for egg wash, optional)
  • 15 milliliters Water (for egg wash, optional)

Directions

Step 1

In a small pot, heat the milk over low heat until warm but not hot (about 38°C or 100°F). Remove from heat and stir in the butter until melted. Let the mixture cool slightly.

Step 2

In a large mixing bowl, combine flour, sugar, salt, and yeast. Stir to combine the dry ingredients evenly.

Step 3

Add the warm milk mixture and the egg to the dry ingredients. Mix until a sticky dough forms.

Step 4

Turn the dough out onto a lightly floured surface and knead for 8–10 minutes until smooth and elastic, or use a stand mixer with a dough hook attachment for 6–8 minutes on medium speed.

Step 5

Place the dough in a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

Step 6

After the first rise, punch down the dough to release the air, and divide it into 12 equal portions (approximately 55–60 grams each). Shape each portion into a smooth ball.

Step 7

Arrange the dough balls into a greased or parchment-lined 9x13-inch baking dish, spacing them slightly apart. Cover and let rise again for 30–40 minutes, or until doubled in size.

Step 8

Preheat your oven to 180°C (350°F). If using an egg wash, whisk together the egg yolk and water, and gently brush the tops of the rolls for a shiny finish.

Step 9

Bake the rolls in the preheated oven for 20–25 minutes, or until golden brown and cooked through. To check doneness, lightly tap the top of a roll—it should sound hollow.

Step 10

Remove the rolls from the oven and let them cool for 10 minutes in the pan before transferring to a cooling rack. Serve warm or at room temperature.
