  • 1 lb beef stew meat, cut into 1-inch cubes
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 medium celery stalks, diced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup frozen peas
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 pie crust, store-bought or homemade
  • 1 egg, beaten

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the beef stew meat with salt and black pepper. Lightly dust with flour, shaking off any excess.

Step 3

In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the beef in batches and sear until browned on all sides, about 5 minutes per batch. Transfer the meat to a plate and set aside.

In the same skillet, heat the remaining tablespoon of olive oil. Add the diced onion, carrots, and celery, and cook until softened, about 5 minutes. Add the garlic and cook for 1 additional minute.
