Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 pieces large eggs
  • 0.5 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon salt

Directions

Step 1

Preheat your oven to 325°F (163°C).

Step 2

In a medium saucepan, combine the whole milk and heavy cream. Heat over medium-low heat until it is warm but not boiling. Remove from heat and set aside to cool slightly.

Step 3

In a large mixing bowl, whisk together the eggs, granulated sugar, vanilla extract, ground nutmeg, and salt until well combined.

Step 4

Slowly pour the warm milk and cream mixture into the egg mixture, whisking continuously to prevent the eggs from curdling. Strain the mixture through a fine-mesh sieve to ensure the custard is smooth.

Step 5

Evenly divide the custard mixture between 6 small ramekins or custard cups.

Step 6

Place the ramekins in a large baking dish. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins, creating a water bath to ensure even cooking.

Step 7

Carefully transfer the baking dish to the preheated oven and bake for 45-50 minutes, or until the custards are set but still have a slight jiggle in the center.

Step 8

Remove the ramekins from the water bath and let them cool to room temperature. Optionally, sprinkle a little extra nutmeg on top for garnish.

Step 9

Once cooled, refrigerate the custards for at least 2 hours before serving. Serve chilled or at room temperature.
