Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 0.5 teaspoon cayenne pepper
  • 500 grams beef chuck, cut into 1-inch cubes
  • 2 tablespoons tomato paste
  • 400 grams canned diced tomatoes
  • 500 milliliters beef stock
  • 200 milliliters coconut milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

Heat the vegetable oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté until golden brown, about 5 minutes.

Step 3

Stir in the minced garlic and grated ginger, and cook for an additional 2 minutes until fragrant.

Step 4

Add the ground cumin, ground coriander, turmeric powder, garam masala, and cayenne pepper. Stir well and cook for 1 more minute to toast the spices.

Step 5

Increase the heat to medium-high and add the beef cubes, stirring well to coat with the spices. Cook until the beef is browned on all sides, about 8 minutes.

Step 6

Add the tomato paste and canned diced tomatoes to the pot. Stir well to combine.

Step 7

Pour in the beef stock, bring to a boil, then reduce the heat to low and let it simmer for 1 hour, or until the beef is tender.

Step 8

Stir in the coconut milk, salt, and black pepper, and continue to simmer for another 15-20 minutes to allow the flavors to meld together.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Remove from heat and garnish with fresh cilantro before serving. Serve hot over rice or with naan bread.
