Ingredients

  • 2 cups White rice
  • 4 cups Water
  • 1 teaspoon Salt
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1.5 cups Mixed vegetables (carrot, peas, corn), diced
  • 1 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 cups Grated Parmesan cheese (optional)
  • 1 tablespoon Butter
  • 0 as needed Non-stick cooking spray

Directions

Step 1

Rinse the rice under cold water until the water runs clear. This removes excess starch and prevents the rice from becoming gummy.

Step 2

In a medium-sized pot, bring 4 cups of water to a boil. Add the rice, salt, and a drizzle of olive oil. Reduce the heat to low, cover the pot, and let the rice simmer for 15-18 minutes, or until the water has been absorbed and the rice is tender. Remove from heat and let it rest with the lid on for 5 minutes.

Step 3

While the rice is cooking, heat the remaining olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 4

Add the diced mixed vegetables to the skillet and sauté for 5-6 minutes, or until they are tender. Season with black pepper and adjust salt if needed. Turn off the heat and stir in the chopped parsley.

Step 5

In a large bowl, combine the cooked rice with the sautéed vegetable mixture. Gently mix until well-distributed. If desired, fold in the grated Parmesan cheese for extra flavor.

Step 6

Grease a bundt pan or ring mold with butter and lightly coat it with non-stick cooking spray to ensure easy release.

Step 7

Spoon the rice and vegetable mixture into the prepared mold, pressing it down gently with a spatula to compact it. Smooth the top to ensure an even ring shape.

Step 8

Place the mold in a preheated oven at 350°F (175°C) for 10 minutes to allow the flavors to meld and the shape to set.

Step 9

Carefully remove the mold from the oven and let it rest for 5 minutes. Place a serving plate over the mold and invert it to release the rice ring.

Step 10

Serve the rice ring warm, garnished with additional parsley or Parmesan cheese, if desired. Pair it with your favorite main dish or enjoy it as a standalone centerpiece.
