Ingredients

  • 1 cup White rice
  • 2 cups Water
  • 3 cups Milk
  • 0.5 cup Granulated sugar
  • 2 tablespoons Butter
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Ground cinnamon
  • 0.5 cup Raisins
  • 0.25 teaspoon Salt

Directions

Step 1

Rinse the rice under cold water until the water runs clear. This step removes excess starch for a creamier pudding.

Step 2

In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 10 minutes, or until the rice has absorbed most of the water.

Step 3

Add the milk, sugar, butter, cinnamon, and salt to the saucepan. Stir to combine.

Step 4

Increase the heat to medium and cook the mixture, stirring constantly to prevent the rice from sticking to the bottom of the pan. Cook for approximately 20 minutes, or until the mixture thickens and the rice becomes tender.

Step 5

Stir in the raisins and continue cooking for another 5 minutes, allowing the raisins to plump up and blend into the pudding.

Step 6

Remove the saucepan from the heat, and stir in the vanilla extract.

Step 7

Let the rice pudding cool for a few minutes. As it cools, it will continue to thicken.

Step 8

Serve warm for a comforting dessert, or refrigerate and serve chilled as a refreshing treat. Optionally, garnish with a sprinkle of ground cinnamon or a dollop of whipped cream.
