Ingredients

  • 1 cup White rice
  • 8 cups Water
  • 2 cups Chicken or vegetable stock
  • 2 large Fresh eggs
  • 1 inch piece, thinly sliced Ginger
  • 1 teaspoon Salt
  • 2 tablespoons Soy sauce
  • 2 stalks, thinly sliced Green onions
  • 1 teaspoon Sesame oil
  • 0.25 teaspoon Pepper

Directions

Step 1

Rinse the white rice thoroughly under cold water until the water runs clear to remove excess starch.

Step 2

In a large pot, combine the rinsed rice, water, chicken or vegetable stock, and sliced ginger. Bring the mixture to a boil over medium-high heat.

Step 3

Once boiling, reduce the heat to low and simmer uncovered for about 40 minutes, stirring occasionally to prevent the rice from sticking to the bottom of the pot.

Step 4

As the rice cooks, it will break down and create a creamy porridge consistency. If the porridge becomes too thick, add a splash of hot water or stock to reach your desired consistency.

Step 5

Season the porridge with salt, soy sauce, and pepper. Stir well to combine.

Step 6

Crack the fresh eggs directly into the hot porridge. Let the eggs sit undisturbed for 2-3 minutes, allowing the whites to set while the yolks remain runny. For firmer yolks, cover the pot with a lid for an additional minute.

Step 7

Ladle the porridge into individual bowls, being careful not to break the egg yolks.

Step 8

Drizzle a small amount of sesame oil over each bowl and garnish with sliced green onions.

Step 9

Serve immediately while hot. Stir the egg lightly into the porridge for a rich, silky texture before eating, if desired.
