Ingredients

  • 2 cups Rice flour
  • 0.25 cups Urad dal flour (black gram flour)
  • 2 tablespoons Butter
  • 1 teaspoon Cumin seeds
  • 0.25 teaspoons Asafoetida (hing)
  • 1 teaspoon Salt
  • 0.75 cups Water
  • 3 cups Oil

Directions

Step 1

In a large mixing bowl, combine the rice flour, urad dal flour, butter, cumin seeds, asafoetida, and salt.

Step 2

Gradually add water to the dry ingredients while mixing to form a soft, pliable dough. The dough should not be too sticky or too dry.

Step 3

Attach a star-shaped disc to a murukku press or piping tool. Grease the inside of the press lightly with oil to prevent sticking.

Step 4

Fill the murukku press with a portion of the dough.

Step 5

Heat the oil in a deep frying pan over medium heat. To test if the oil is hot enough, drop a small piece of dough into the oil. If it sizzles and rises to the surface, the oil is ready.

Step 6

Squeeze the dough from the murukku press in a circular pattern directly into the hot oil or onto parchment paper first (to transfer later). Fry in batches to avoid overcrowding.

Step 7

Cook the murukku until it turns golden brown and crispy, flipping gently to ensure even frying. This usually takes 2-3 minutes per batch.

Step 8

Remove the murukku using a slotted spoon and drain on a plate lined with paper towels to absorb excess oil.

Step 9

Repeat the process with the remaining dough, ensuring the oil temperature remains consistent.

Step 10

Once cooled completely, store the murukku in an airtight container to maintain its crispiness. Serve and enjoy as a snack!
