Ingredients

  • 6 tablespoons unsalted butter
  • 10 cups mini marshmallows
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 6 cups Rice Krispies cereal
  • 0.75 cup mini chocolate chips
  • 0.5 cup smooth peanut butter
  • 0.25 cup rainbow sprinkles (optional)

Directions

Step 1

Grease a 9x13-inch rectangular baking pan lightly with butter or cooking spray. Line it with parchment paper, leaving some overhang for easy lifting later. Set aside.

Step 2

In a large pot, melt the unsalted butter over medium heat. Once it's melted, reduce the heat to low and add 8 cups of mini marshmallows, stirring continuously until completely melted and smooth.

Step 3

Remove the pot from heat and stir in the vanilla extract and salt.

Step 4

Quickly fold in the Rice Krispies cereal using a silicone spatula that's been greased or sprayed with cooking spray. Mix until the cereal is evenly coated with the marshmallow mixture.

Step 5

Gently stir in the remaining 2 cups of mini marshmallows, smooth peanut butter, and 1/2 cup of mini chocolate chips—reserving 1/4 cup for topping. Do not overmix to avoid melting the add-ins.

Step 6

Transfer the mixture into the prepared 9x13-inch pan. Lightly press it into an even layer using the spatula or parchment paper to prevent sticking. Avoid compacting the mixture too much to keep the bars light and chewy.

Step 7

Sprinkle the reserved mini chocolate chips and rainbow sprinkles on top, pressing lightly so they stick.

Step 8

Allow the bars to cool and set for at least 1 hour at room temperature or 30 minutes in the refrigerator.

Step 9

Once set, lift the bars out of the pan using the parchment paper overhang. Place them on a cutting board and slice into 12 equal portions or your desired size.

Step 10

Store in an airtight container at room temperature for up to 3 days (if they last that long!).
