Ingredients

  • 2 cups All-purpose flour
  • 0.3333333333333333 cup Granulated sugar
  • 2.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cup Unsalted butter (cold, cubed)
  • 1 cup Fresh or frozen cranberries (coarsely chopped)
  • 0.5 cup Heavy cream
  • 1 Egg (large)
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Coarse sugar (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

Step 3

Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the dry ingredients until the mixture resembles coarse sand with pea-sized pieces of butter.

Step 4

Gently fold in the chopped cranberries and toss to coat them in the flour mixture.

Step 5

In a small bowl, whisk together the heavy cream, egg, and vanilla extract.

Step 6

Pour the wet ingredients into the dry ingredients and mix gently with a wooden spoon or spatula until the dough just comes together. Be careful not to overmix.

Step 7

Turn the dough out onto a lightly floured surface. With floured hands, gently knead the dough a few times to bring it together.

Step 8

Shape the dough into a circle about 1 inch thick and 8 inches in diameter. Using a sharp knife, cut the circle into 8 equal wedges.

Step 9

Place the wedges onto the prepared baking sheet, spacing them slightly apart. If desired, sprinkle the tops with coarse sugar for added sweetness and crunch.

Step 10

Bake in the preheated oven for 15–17 minutes, or until the scones are golden brown on top and a toothpick inserted into the center comes out clean.

Step 11

Let the scones cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature.
