Ingredients

  • 3 whole Lemons (zested and juiced)
  • 150 grams Granulated sugar
  • 250 milliliters Heavy cream (cold)
  • 3 large Egg yolks
  • 60 grams Unsalted butter
  • 5 grams Gelatin powder
  • 30 milliliters Cold water

Directions

Step 1

In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for 5-10 minutes to bloom.

Step 2

Zest and juice the lemons. You will need approximately 60 milliliters (1/4 cup) of lemon juice.

Step 3

In a medium saucepan, whisk together the egg yolks, granulated sugar, and lemon juice until smooth.

Step 4

Place the saucepan over medium heat. Stir continuously with a whisk or spatula until the mixture thickens to a custard-like consistency, about 4-6 minutes. Do not let it boil.

Remove the saucepan from heat and stir in the lemon zest and unsalted butter until completely melted and smooth.
