Ingredients

  • 12 pieces sea scallops
  • 200 grams oyster mushrooms
  • 4 tablespoons unsalted butter
  • 1 cup dry white wine
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Pat the scallops dry with a paper towel and season with salt and black pepper on both sides. Set aside.

Step 2

Gently clean the oyster mushrooms and trim any tough ends. Slice the mushrooms into thin ribbons that can be wrapped around the scallops.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the garlic cloves (minced) for 1 minute until fragrant.

Step 4

Add the sliced oyster mushroom ribbons to the skillet and cook for 2-3 minutes until lightly tender but still flexible. Remove from the skillet and set aside.

Step 5

Wrap each seasoned scallop with a ribbon of sautéed oyster mushroom and secure the ends with toothpicks if necessary.

Step 6

In the same skillet, melt 4 tablespoons of unsalted butter over medium heat. Add the wrapped scallops and sear for 2 minutes per side until golden brown.

Step 7

Pour 1 cup of dry white wine into the skillet, followed by 1 tablespoon of lemon juice. Bring to a gentle simmer and cook the scallops for an additional 3-4 minutes, basting them with the liquid for even flavor.

Step 8

Sprinkle the fresh parsley (chopped) over the scallops before serving. Remove the toothpicks if used.

Step 9

Transfer the Ribbon Oyster Scallops to serving plates and drizzle with the remaining buttery sauce from the skillet.

Step 10

Serve warm with a side of crusty bread or fresh salad.
