Ingredients

  • 500 grams rhubarb stalks
  • 100 grams granulated sugar
  • 1 piece or teaspoon vanilla bean or vanilla extract
  • 60 milliliters water
  • 1 tablespoon lemon juice

Directions

Step 1

Wash the rhubarb stalks thoroughly and trim off the ends. Cut the stalks into 1-inch (2.5 cm) pieces.

If using a vanilla bean, split it lengthwise and scrape out the seeds with the back of a knife. Reserve both the seeds and the pod. If using vanilla extract, set it aside for later.

In a medium saucepan, combine the rhubarb, granulated sugar, water, and lemon juice. Add the vanilla seeds and pod (or save the vanilla extract for the end of cooking).
