  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 cup (2 sticks) Butter, cold and cubed
  • 3 large Eggs
  • 2 cups Granulated sugar (for filling)
  • 1 third-cup All-purpose flour (for filling)
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 1 teaspoon Vanilla extract
  • 4 cups Fresh rhubarb, diced
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper or grease it lightly.

In a large mixing bowl, combine 2 cups of all-purpose flour and 1 cup of granulated sugar.

Add the cold, cubed butter to the flour mixture and cut it in using a pastry cutter or your hands until the mixture resembles coarse crumbs.
