Ingredients

  • 4 cups (chopped) rhubarb stalks
  • 6 cups water
  • 0.5 cups sugar
  • 4 pieces black tea bags
  • 2 tablespoons lemon juice
  • 2 cups ice cubes
  • 0.25 cups fresh mint leaves (optional, for garnish)

Directions

Step 1

Wash and chop the rhubarb stalks into small pieces.

In a medium-sized saucepan, combine the chopped rhubarb and water. Bring the mixture to a gentle boil over medium-high heat and then reduce the heat to low. Simmer for about 10 minutes, or until the rhubarb becomes soft and breaks apart.

Strain the rhubarb mixture through a fine-mesh sieve into a clean pitcher or bowl, pressing on the solids to extract all the juice. Discard the rhubarb pulp.

Step 4

While the rhubarb juice is still hot, stir in the sugar until completely dissolved.

Add the black tea bags to the hot rhubarb juice and steep for 5 minutes. Remove the tea bags and discard.

Stir in the lemon juice and allow the tea to cool to room temperature. Once cooled, transfer to the refrigerator to chill for at least 1 hour.

To serve, fill glasses with ice cubes and pour the chilled rhubarb tea over the ice.
