Ingredients

  • 4 cups rhubarb stalks, chopped
  • 6 cups water
  • 1 cup granulated sugar
  • 1 tablespoon orange zest
  • 1 teaspoon lemon zest
  • 1.5 cups orange juice (freshly squeezed)
  • 0.5 cups lemon juice (freshly squeezed)
  • 4 cups club soda or sparkling water (chilled)
  • 0 fresh mint leaves (optional, for garnish)
  • 0 orange or lemon slices (optional, for garnish)

Directions

Step 1

Add the chopped rhubarb and water to a large saucepan. Bring to a boil over medium-high heat.

Step 2

Reduce the heat to medium-low and simmer for 15 minutes, or until the rhubarb has softened and broken down.

Step 3

Strain the rhubarb mixture through a fine mesh sieve into a large bowl or pitcher, pressing gently to extract the liquid. Discard the solids.

Step 4

While the rhubarb liquid is still warm, stir in the granulated sugar, orange zest, and lemon zest until the sugar has dissolved completely.

Step 5

Allow the mixture to cool to room temperature, then stir in the freshly squeezed orange juice and lemon juice.

Step 6

Chill the rhubarb-citrus mixture in the refrigerator for at least 1 hour.

Step 7

Just before serving, combine the chilled rhubarb-citrus mixture with the club soda or sparkling water in a punch bowl or large pitcher. Stir gently to combine.

Step 8

Serve over ice in individual glasses. Garnish with fresh mint leaves and citrus slices, if desired.
