Ingredients

  • 4 slices Rye bread
  • 2 tablespoons Butter
  • 0.5 pounds Corned beef
  • 1.5 cups Sauerkraut
  • 2 cups Swiss cheese
  • 0.75 cups Thousand Island dressing
  • 0.25 cups Dill pickles (optional, for garnish)
  • 1 teaspoon Caraway seeds (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the rye bread into small cubes. Heat a skillet over medium heat and add the butter. Once melted, add the bread cubes and toast them until golden and crisp. Set aside to cool.

Step 3

Shred the corned beef into bite-sized pieces and set aside.

Step 4

In a large mixing bowl, combine the sauerkraut and Thousand Island dressing. If desired, add the optional caraway seeds for extra flavor.

Step 5

Grease a 9x9-inch or similar-sized baking dish. Spread half of the toasted rye bread cubes on the bottom of the dish.

Step 6

Layer half of the corned beef on top of the bread cubes, followed by half of the sauerkraut mixture. Sprinkle half of the Swiss cheese over the sauerkraut.

Step 7

Repeat the layering process with the remaining bread cubes, corned beef, sauerkraut mixture, and Swiss cheese.

Step 8

Cover the dish with aluminum foil and bake for 20 minutes. Then remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 9

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with chopped dill pickles, if desired, and serve warm.
