Ingredients

  • 12 pieces egg roll wrappers
  • 1 cup corned beef, thinly sliced
  • 1 cup Swiss cheese, shredded
  • 1 cup sauerkraut, drained and patted dry
  • 0.5 cup Thousand Island dressing
  • 0.25 cup water
  • 3 cups vegetable oil (for frying)

Directions

Step 1

Place an egg roll wrapper on a clean surface with one corner pointing towards you, like a diamond.

Step 2

Spread 1 tablespoon of Thousand Island dressing across the center of the wrapper.

Step 3

Layer a small amount of corned beef, Swiss cheese, and sauerkraut in the center of the wrapper on top of the dressing.

Step 4

Dip your finger in water and lightly brush the edges of the wrapper to help seal it.

Step 5

Fold the bottom corner of the wrapper tightly over the filling, then fold in the sides. Roll the wrapper tightly to form a cylinder, sealing the top corner with more water. Repeat with the remaining wrappers and filling.

Step 6

In a deep skillet or heavy-bottomed pot, heat vegetable oil to 350°F (175°C).

Step 7

Carefully add a few rolls to the hot oil, ensuring not to overcrowd the pan. Fry for 3-4 minutes, turning occasionally, until golden brown and crispy.

Step 8

Remove the rolls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Step 9

Repeat frying with the remaining rolls.

Step 10

Allow the Reuben Rolls to cool slightly before serving. Serve with extra Thousand Island dressing for dipping.
