Ingredients

  • 4 whole Russet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Shredded cheddar cheese
  • 4 slices Cooked bacon, crumbled
  • 2 tablespoons Green onions, chopped
  • 0.5 cup Sour cream (for serving, optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the potatoes thoroughly and pat them dry. Pierce each potato a few times with a fork to allow steam to escape during baking.

Rub the potatoes with 1 tablespoon of olive oil and place them directly on the oven rack. Bake for 45-50 minutes, or until the potatoes are tender when pierced with a fork. Remove from the oven and let them cool enough to handle.

Cut each potato in half lengthwise. Scoop out the inside of each potato half, leaving about 1/4 inch of the potato flesh attached to the skin. Reserve the scooped-out potato for another use, such as mashed potatoes.
