Ingredients

  • 400 grams Thinly sliced pork (shabu-shabu cut)
  • 20 Ice cubes
  • 2000 milliliters Water
  • 100 grams Mixed salad greens
  • 1 Cucumber, thinly sliced
  • 1 Tomato, sliced into wedges
  • 2 tablespoons Sesame seeds (for garnish)
  • 4 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 teaspoon Grated ginger
  • 2 tablespoons Dashi stock (optional)

Directions

Step 1

Prepare a large bowl filled with ice water. Add the ice cubes to ensure it’s very cold.

Step 2

Bring 2000 milliliters of water to a boil in a pot. Once boiling, reduce the heat to a simmer.

Step 3

Working in batches, gently swish the thinly sliced pork in the simmering water using chopsticks. Cook each slice for about 10–15 seconds or until it turns white. Avoid overcooking.

Step 4

Immediately transfer the cooked pork slices into the ice water to cool and stop the cooking process. Repeat until all the pork is cooked.

Step 5

Once the pork slices are completely chilled, drain them well and set aside on a plate lined with paper towels.

Step 6

Prepare the dipping sauce by combining soy sauce, rice vinegar, sesame oil, grated ginger, and dashi stock (if using) in a small bowl. Mix well and set aside.

Step 7

Arrange the mixed salad greens, sliced cucumber, and tomato wedges on a serving platter.
