Ingredients

  • 2 pieces chicken breast
  • 2 tablespoons jerk seasoning
  • 2 tablespoons olive oil
  • 4 pieces large tortilla wraps
  • 1 large mango
  • 0.25 cup coconut milk
  • 1 tablespoon lime juice
  • 2 cups mixed greens
  • 1 cup shredded carrot
  • 1 medium red bell pepper, thinly sliced
  • 0.5 medium red onion, thinly sliced
  • 0.25 teaspoon salt

  • 2 tablespoons cilantro, chopped

Directions

Step 1

Cut the chicken breasts into thin strips.

Step 2

In a bowl, combine the chicken strips with the jerk seasoning and 1 tablespoon of olive oil. Toss until the chicken is evenly coated.

Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken and cook for 6-8 minutes, or until fully cooked and slightly charred in spots. Remove from heat and set aside.
