Ingredients

  • 12 pieces Lasagna noodles
  • 3 cups Refried beans
  • 2 cups Salsa
  • 3 cups Shredded Mexican blend cheese
  • 1 pound Ground beef or turkey (optional)
  • 2 tablespoons Taco seasoning
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 cup Corn kernels (frozen or canned, drained)
  • 0.5 cup Black olives, sliced (optional)
  • 0.25 cup Fresh cilantro, chopped (optional)
  • 0.5 cup Sour cream (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the lasagna noodles according to the package instructions. Drain and set aside.

Step 3

If using ground meat, heat a skillet over medium heat. Add the diced onion and minced garlic, and sauté for about 2 minutes until fragrant. Add the ground beef or turkey and cook until browned, breaking it up with a spoon. Stir in the taco seasoning and 1/4 cup of salsa. Remove from heat.

Step 4

Spread a thin layer of salsa (about 1/2 cup) evenly on the bottom of a 9x13-inch baking dish.

Step 5

Place a layer of cooked lasagna noodles (about 4 pieces) on top of the salsa, slightly overlapping the edges.

Step 6

Spread 1 cup of refried beans evenly over the noodles. Top with 1/3 of the cooked meat mixture (if using), 1/3 cup of corn, a sprinkle of black olives (if using), and 1/2 cup of shredded cheese.

Step 7

Repeat the layering process two more times: salsa, noodles, refried beans, meat (optional), corn, olives, and cheese.

Step 8

Add a final layer of noodles on top, spread the remaining salsa over the noodles, and sprinkle the remaining cheese evenly across the top.

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 10

Remove the lasagna from the oven and let it rest for 10 minutes before slicing.

Step 11

Garnish with fresh cilantro and a dollop of sour cream, if desired, before serving.
