Ingredients

  • 1 lb Ground beef (80/20 blend)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 3 tbsp Butter
  • 2 medium Yellow onion
  • 4 slices Swiss cheese
  • 4 slices Rye bread
  • 1 tbsp Vegetable oil

Directions

Step 1

1. In a mixing bowl, combine the ground beef with salt and black pepper. Mix gently until evenly combined. Divide the mixture into two equal portions and shape them into thin, slightly larger-than-bread-sized patties.

Step 2

2. Peel and thinly slice the yellow onions. Set aside.

Step 3

3. Heat 1 tablespoon of butter and the vegetable oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-12 minutes until caramelized and golden brown. Remove the onions from the skillet and set aside.

Step 4

4. Using the same skillet, cook the beef patties over medium-high heat for 3-4 minutes per side or until cooked to your preferred doneness (internal temperature of 160°F for well-done). Remove the patties from the skillet and set aside.

Step 5

5. Wipe out the skillet if necessary, then reduce the heat to medium. Butter one side of each slice of rye bread using the remaining 2 tablespoons of butter.

Step 6

6. Assemble the sandwiches by layering one slice of bread (butter side down), one slice of cheese, a cooked beef patty, caramelized onions, another slice of cheese, and the second slice of bread (butter side up). Repeat for the second sandwich.

Step 7

7. Place the sandwiches in the skillet and cook over medium heat for 3-4 minutes per side until the bread is golden brown and crispy, and the cheese has melted. Press gently with a spatula to help the ingredients meld together.

Step 8

8. Remove from the skillet, slice the sandwiches in half if desired, and serve hot.
