Ingredients

  • 400 grams Spaghetti
  • 750 milliliters Dry red wine
  • 750 milliliters Water
  • 2 teaspoons Salt
  • 2 tablespoons Olive oil
  • 3 Garlic cloves (minced)
  • 0.5 teaspoons Red pepper flakes
  • 50 grams Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 0.5 teaspoons Black pepper (freshly ground)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the spaghetti for about 4-5 minutes, just until it starts to soften. Drain and set aside, reserving 1 cup of the pasta water.

Step 2

In the same pot, combine the red wine, water, and 1 teaspoon of salt. Bring to a simmer.

Step 3

Add the partially cooked spaghetti to the pot with the wine mixture. Cook the spaghetti in the wine, stirring occasionally, until al dente and most of the liquid has been absorbed (about 7-10 minutes). If needed, add small amounts of the reserved pasta water to prevent the pasta from drying out.

While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, cooking for 1-2 minutes until fragrant.
