Wash and hull the strawberries. Blend them with 1 tablespoon of honey until smooth.
Divide the strawberry puree evenly among the popsicle molds, filling each about 1/3 of the way. Place the molds in the freezer for 15-20 minutes to partially set.
In a small bowl, mix the Greek yogurt, milk, and 1 tablespoon of honey until smooth. Carefully spoon the yogurt mixture into the molds over the set strawberry layer, filling another 1/3 of the molds. Freeze for another 15-20 minutes.
Rinse the blueberries and blend them with the remaining 1 tablespoon of honey until smooth. Pour the blueberry puree into the molds on top of the yogurt layer, filling the molds to the top.
Insert popsicle sticks into each mold and freeze the popsicles for at least 4 hours, or until fully set.
To remove the popsicles, briefly run the molds under warm water to release them. Serve immediately and enjoy!
