Ingredients

  • 2 lb red potatoes
  • 1 cup water
  • 2 tbsp olive oil
  • 2 cloves garlic cloves, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp parsley, chopped (optional for garnish)

Directions

Step 1

Wash the red potatoes thoroughly and cut them into halves or quarters, depending on their size, to ensure even cooking.

Step 2

Place the pressure cooker pot on the stove or plug in your electric pressure cooker, and add 1 cup of water to the pot.

Step 3

Place a steamer basket or trivet inside the pressure cooker and arrange the cut potatoes evenly on top.

Step 4

Close the lid of the pressure cooker and set the valve to the sealing position. For an electric pressure cooker, select the 'Manual' or 'Pressure Cook' setting and set the timer for 4 minutes on high pressure. For a stovetop pressure cooker, cook on high pressure for 4 minutes after reaching pressure.

Step 5

Once the timer is up, quickly release the pressure by carefully turning the valve to the venting position until all the steam has escaped. Open the lid and check the potatoes for doneness (they should be fork-tender). Set the potatoes aside.

Step 6

Select the 'Sauté' function on your electric pressure cooker or return the stovetop cooker to medium heat. Add the olive oil and minced garlic to the pot. Sauté for 1-2 minutes until the garlic becomes fragrant but not browned.

Step 7

Turn off the sauté function or remove from heat. Carefully add the cooked potatoes back to the pot and gently toss them in the garlic oil to coat them evenly.

Step 8

Season the potatoes with salt and black pepper, tossing again to distribute the seasoning.

Step 9

Serve the potatoes warm, garnished with freshly chopped parsley if desired.
