Ingredients

  • 3 large red bell peppers
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 medium shallot
  • 0.25 cups vegetable stock
  • 1 tablespoon lemon juice

  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven's broiler (or use a gas stovetop flame if preferred).

Place the red bell peppers on a baking sheet under the broiler, turning them occasionally, until the skins are charred and blistered on all sides, about 5-7 minutes. Alternatively, roast them over a gas flame using tongs.
