Ingredients

  • 1 cup Roasted red peppers (jarred or freshly roasted)
  • 1.5 cups Sharp cheddar cheese (shredded)
  • 8 ounces Cream cheese (softened)
  • 0.25 cup Mayonnaise
  • 2 cloves Garlic (minced)
  • 1 teaspoon Smoked paprika
  • 1 tablespoon Lemon juice (freshly squeezed)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Fresh parsley (chopped, for garnish)
  • 1 assortment Crackers or fresh vegetables (for serving)

Directions

Step 1

If using freshly roasted red peppers, allow them to cool, then peel, deseed, and chop them into smaller pieces. If using jarred roasted red peppers, simply drain them and blot them dry with a paper towel.

Step 2

In a food processor or blender, add the roasted red peppers, softened cream cheese, mayonnaise, and minced garlic.

Step 3

Pulse the mixture until smooth and creamy, scraping down the sides as needed.

Step 4

Add the shredded sharp cheddar cheese, smoked paprika, lemon juice, salt, and black pepper to the food processor. Pulse a few more times until everything is well combined, but leave some texture for a chunkier dip if desired.

Step 5

Transfer the dip to a serving bowl and smooth out the top with a spatula.

Step 6

Sprinkle the chopped fresh parsley over the dip as a garnish.

Step 7

Serve immediately with crackers, fresh vegetables, or breadsticks. Alternatively, cover the bowl and refrigerate for up to 3 days; allow the dip to come to room temperature before serving.
