Ingredients

  • 2 pounds red potatoes
  • 1 head garlic
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter

  • 0.25 cups milk
  • 1 teaspoon salt

  • 1 tablespoon chopped fresh parsley (optional)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Slice off the top of the garlic head to expose the cloves slightly. Drizzle with olive oil, wrap in aluminum foil, and roast in the preheated oven for 25-30 minutes, or until the cloves are soft and golden. Set aside to cool.
