Ingredients

  • 2 lbs Chicken wings
  • 3 tbsp Red curry paste
  • 1 cup Coconut milk
  • 2 tbsp Soy sauce
  • 2 tbsp Honey
  • 2 tbsp Lime juice
  • 3 Garlic cloves (minced)
  • 1 tbsp Ginger (grated)
  • 1 tbsp Vegetable oil
  • 1 tbsp Brown sugar
  • 2 tbsp Fresh cilantro (chopped, for garnish)
  • 0.5 tsp Red chili flakes (optional, for additional heat)

Directions

Step 1

In a large mixing bowl, whisk together the red curry paste, coconut milk, soy sauce, honey, lime juice, minced garlic, grated ginger, vegetable oil, and brown sugar to create the marinade.

Step 2

Add the chicken wings to the bowl and toss them in the marinade until fully coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.

Step 3

Preheat the oven to 400°F (200°C). Line a baking sheet with aluminum foil or parchment paper and place a wire rack on top.

Step 4

Arrange the marinated chicken wings on the wire rack, making sure they are spaced out evenly to allow for proper air circulation during cooking.

Step 5

Brush the wings with any remaining marinade and bake for 20 minutes. Flip the wings over, brush them with more marinade, and bake for an additional 20 minutes, or until the wings are golden brown and cooked through with an internal temperature of 165°F (74°C).

Step 6

For extra caramelization, turn the oven to broil for the last 2-3 minutes of cooking, keeping a close eye to prevent burning.

Step 7

Remove the wings from the oven and let them rest for 5 minutes. Garnish with chopped cilantro and a sprinkle of red chili flakes if desired.

Step 8

Serve hot and enjoy your flavorful Red Curry Chicken Wings!
