Ingredients

  • 1 cup couscous
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 red bell pepper
  • 2 garlic cloves
  • 0.5 teaspoons ground cumin
  • 0.5 teaspoons paprika
  • 2 tablespoons parsley
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Heat 1 cup of water in a small saucepan until it comes to a boil. Add a pinch of salt and 1 teaspoon of olive oil, then stir in the couscous. Remove the pan from heat, cover with a lid, and let it sit for 5 minutes.

Step 2

While the couscous is resting, finely chop the red bell pepper and mince the garlic cloves.

Step 3

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped red bell pepper and cook for 3-4 minutes, stirring occasionally, until it starts to soften.

Step 4

Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.

Step 5

Stir in the ground cumin and paprika, and cook for 30 seconds to bloom the spices.

Step 6

Fluff the couscous with a fork and add it to the skillet with the red bell peppers. Stir to combine.

Step 7

Add the chopped parsley, lemon juice, salt, and black pepper to the couscous mixture. Stir well to evenly distribute the flavors.

Step 8

Taste and adjust seasoning as needed. Serve warm or at room temperature.
