Ingredients

  • 3 medium fresh beets
  • 3 tablespoons olive oil
  • 2 large garlic cloves
  • 2 tablespoons lemon juice
  • 1 tablespoon tahini
  • 1 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon ground cumin
  • 2 tablespoons water

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash the beets thoroughly under running water to remove any dirt. Trim any greens but leave about 1 inch of the stem intact.

Step 3

Wrap each beet individually in aluminum foil. Place them on a baking sheet and roast in the preheated oven for 45 minutes or until tender when pierced with a fork.

While the beets are roasting, peel and coarsely chop the garlic cloves.

Once beets are done, remove them from the oven and allow them to cool until they are safe to handle. Unwrap the foil and peel the skin off using your hands or a paper towel.

Cut the peeled beets into quarters and place them in a food processor.

Add the garlic, olive oil, lemon juice, tahini, salt, black pepper, and cumin to the food processor.
