Ingredients

  • 2 pounds beef chuck (cut into 1-inch cubes)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 yellow onion (diced)
  • 3 garlic cloves (minced)
  • 3 carrots (peeled and sliced into rounds)
  • 2 celery stalks (chopped)
  • 4 potatoes (diced into 1-inch cubes)
  • 2 tablespoons tomato paste
  • 1 15-ounce can diced tomatoes (canned with juice)
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper, then toss with the flour until evenly coated.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the beef cubes in batches (to avoid overcrowding) and sear on all sides until browned. Remove the beef and set aside.

Step 3

In the same pot, lower the heat to medium and add the diced onion. Sauté for 3-4 minutes until softened, then stir in the minced garlic and cook for 1 more minute until fragrant.

Step 4

Add the carrots, celery, and potatoes to the pot. Cook for 5 minutes, stirring occasionally, to lightly brown the vegetables.

Step 5

Stir in the tomato paste and cook for 2 minutes, allowing it to caramelize slightly and coat the vegetables.

Step 6

Add the seared beef back to the pot, along with the canned diced tomatoes (with their juice), beef broth, bay leaf, smoked paprika, and thyme. Stir to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let the stew simmer gently for 90 minutes, stirring occasionally. The beef should become tender, and the flavors will meld together beautifully.

Step 8

After 90 minutes, remove the lid and stir in the frozen peas. Simmer uncovered for another 5-10 minutes until the peas are heated through.

Step 9

Taste the stew and adjust seasoning with additional salt and pepper if needed. Discard the bay leaf before serving.

Step 10

Ladle the stew into bowls, garnish with chopped fresh parsley, and serve warm with crusty bread or over rice if desired.
