Ingredients

  • 300 grams All-purpose flour
  • 50 grams Granulated sugar
  • 7 grams Instant yeast
  • 5 grams Salt
  • 180 milliliters Milk
  • 40 grams Unsalted butter
  • 1 large Egg
  • 300 grams Red bean paste
  • 1 for egg wash Egg yolk
  • 1 tablespoon for egg wash Water
  • 1 tablespoon for topping Sesame seeds

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, instant yeast, and salt.

Step 2

In a small saucepan, gently heat the milk until warm but not hot. Add the butter and stir until melted. Let it cool slightly.

Step 3

Beat the egg and add it to the milk mixture.

Step 4

Pour the wet ingredients into the dry ingredients and mix until a dough forms.

Step 5

Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic.

Step 6

Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place until doubled in size, about 1 hour.

Step 7

Once the dough has risen, punch it down to release the air. Divide the dough into 8 equal pieces.

Step 8

Roll each piece into a ball, flatten slightly, and place about 1 tablespoon of red bean paste in the center.

Step 9

Wrap the dough around the paste, pinching the edges to seal. Shape into a nice round bun and place seam-side down on a parchment-lined baking tray.

Step 10

Cover the buns lightly with a damp cloth and let them rise for another 30 minutes.

Step 11

Preheat the oven to 180°C (350°F).

Step 12

Prepare the egg wash by mixing the egg yolk with 1 tablespoon of water.

Step 13

Brush the tops of the buns with the egg wash and sprinkle with sesame seeds.

Step 14

Bake in the preheated oven for 15-20 minutes, or until golden brown.

Step 15

Remove from oven and let cool on a wire rack before serving. Enjoy your freshly baked red bean buns!
