Ingredients

  • 4 medium Red beets
  • 4 medium Golden beets
  • 3 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoons, chopped Fresh parsley
  • 1 teaspoon Fresh thyme leaves
  • 1 clove, minced Garlic

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse and scrub the red and golden beets under cold water to remove dirt. Do not peel them at this stage.

Step 3

Wrap each beet individually in aluminum foil and place them on a baking sheet.

Step 4

Roast the beets in the preheated oven for 50-60 minutes, or until a knife slides easily into the center of each beet.

While the beets are roasting, prepare the herb vinaigrette. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, parsley, thyme, salt, and black pepper. Set aside.

Once the beets are roasted, carefully unwrap them and let them cool until they are safe to handle.
