Ingredients

  • 6 whole Granny Smith apples
  • 2 cups Granulated sugar
  • 1 cup Light corn syrup
  • 1 cup Water
  • 1 teaspoon Red gel food coloring
  • 1 teaspoon Black gel food coloring
  • 6 sticks Wooden apple sticks
  • 0 (for greasing) Cooking spray

Directions

Step 1

Wash and thoroughly dry the apples to remove any wax or residue that might prevent the candy coating from sticking.

Step 2

Insert a wooden stick into the top of each apple, through the stem end, until it is secure.

Step 3

Lightly grease a large piece of parchment paper or a baking sheet with cooking spray, and set it aside.

Step 4

In a medium-sized, heavy-bottomed saucepan, combine the granulated sugar, light corn syrup, and water.

Step 5

Place the saucepan over medium heat and stir the mixture gently until the sugar dissolves completely.

Step 6

Increase the heat to medium-high and bring the mixture to a boil without stirring. Attach a candy thermometer to the side of the pan, ensuring it does not touch the bottom.

Step 7

Cook the mixture until it reaches 300°F (150°C), also known as the hard-crack stage. This will take about 20 minutes. Keep a close eye on the thermometer to avoid burning the sugar.

Step 8

Once the temperature reaches 300°F, remove the saucepan from the heat and carefully divide the syrup equally into two heatproof bowls.

Step 9

Add red gel food coloring to one bowl, stirring gently until the color is fully incorporated. Repeat the process with black gel food coloring in the second bowl.

Step 10

Working quickly, dip the apples one at a time into either the red or black candy syrup, tilting the bowl and rotating the apple to ensure an even coating. Allow any excess syrup to drip off.

Step 11

Place the coated apples onto the greased parchment paper to cool and harden completely. Repeat the process with all the apples, alternating colors as desired.

Step 12

Once the candy coating is fully set, the apples are ready to serve. Handle with care as the coating is very hard and can crack if dropped.

Step 13

Store in a cool, dry place and enjoy within 1-2 days for best texture and flavor.
