Ingredients

  • 200 grams Unsweetened shredded coconut
  • 200 grams Sweetened condensed milk
  • 1 teaspoon Vanilla extract
  • 2 large Egg whites
  • 1 pinch Salt
  • 100 grams Chocolate chips (optional, for drizzling or dipping)

Directions

Step 1

Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper or a silicone mat.

Step 2

In a large bowl, mix together the shredded coconut, sweetened condensed milk, and vanilla extract until well combined.

Step 3

In a separate medium bowl, whisk the egg whites with a pinch of salt until they form soft peaks.

Step 4

Gently fold the whisked egg whites into the coconut mixture until just combined, being careful not to deflate the egg whites.

Step 5

Using a tablespoon or small ice cream scoop, form small mounds of the mixture and place them on the prepared baking sheet, spacing them about 2 inches apart.

Step 6

Bake in the preheated oven for 18-20 minutes, or until the macaroons are golden brown on the edges and set in the middle.

Step 7

Remove the macaroons from the oven and allow them to cool completely on the baking sheet.

Step 8

If desired, melt the chocolate chips in the microwave in 30-second increments, stirring between each interval, until smooth. Drizzle the melted chocolate over the cooled macaroons or dip the bottoms of the macaroons into the chocolate and place them on wax paper to set.

Step 9

Once the chocolate has hardened, serve the macaroons or store them in an airtight container for up to 5 days.
