  • 500 grams beef tenderloin or sirloin
  • 1 large onion
  • 250 grams white button mushrooms

  • 250 milliliters beef stock
  • 1 teaspoon Dijon mustard
  • 200 grams sour cream
  • 1 teaspoon paprika

Directions

Step 1

Trim the beef and slice it into thin strips, about 5 cm long. Pat dry with a paper towel to ensure a good sear later.

Step 2

Peel and finely chop the onion. Clean and slice the mushrooms thinly.

Step 3

Heat 1 tablespoon of butter and 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the beef strips in batches to avoid overcrowding and sear on all sides until browned. Remove the beef and set aside.
