Ingredients

  • 1 loaf round Italian bread loaf
  • 1 cup green olives, pitted and coarsely chopped
  • 1 cup black olives, pitted and coarsely chopped
  • 1 cup giardiniera (pickled vegetable mix)
  • 1 clove garlic, minced
  • 2 tablespoons capers, rinsed and drained
  • 0.5 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • 0.25 pound thinly sliced Genoa salami
  • 0.25 pound thinly sliced mortadella
  • 0.25 pound thinly sliced ham
  • 0.25 pound thinly sliced provolone cheese
  • 0.25 pound thinly sliced mozzarella cheese

Directions

Step 1

Slice the round Italian bread loaf in half horizontally. Use your fingers to gently hollow out some of the interior bread on both halves to make room for the fillings.

Step 2

In a medium bowl, combine green olives, black olives, giardiniera, minced garlic, capers, olive oil, red wine vinegar, and Italian seasoning. Stir well to create the olive salad. Let the mixture sit for at least 10 minutes to allow the flavors to meld.
