  • 500 grams Ground beef (80% lean)
  • 250 grams Ground pork
  • 1 cup Dry white wine
  • 1 cup Whole milk
  • 1 pinch Nutmeg, freshly grated (optional)
  • 800 grams Canned whole peeled tomatoes
  • 1 cup Beef stock or water
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Heat the olive oil and butter in a large, heavy-bottomed pot over medium heat.

Step 2

Add the diced onion, carrot, and celery to the pot. Cook, stirring occasionally, until the vegetables are soft and translucent, about 10 minutes.

Step 3

Add the ground beef and ground pork to the pot, breaking them up with a wooden spoon. Cook until the meat is browned and no longer pink, about 10 minutes.

Pour in the white wine and stir to deglaze the pot, scraping up any browned bits from the bottom. Let the wine simmer until almost all of it has evaporated, about 5 minutes.
