Ingredients

  • 2 medium Apple (any variety, preferably crisp and sweet)
  • 1 large Carrot
  • 2 stalks Celery stalk
  • 1 cup (shredded) Red cabbage
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil
  • 1 teaspoon Maple syrup
  • 1 teaspoon Dijon mustard
  • 2 tablespoons Chopped parsley (optional)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Raw sunflower seeds (optional, for topping)

Directions

Step 1

Wash all the fresh produce thoroughly under cold running water.

Step 2

Core and thinly slice the apples (no need to peel them). If preferred, cut the slices into matchsticks for a finer texture.

Step 3

Peel the carrot and either grate it or cut it into thin matchsticks.

Step 4

Thinly slice the celery stalks and shred the red cabbage. Combine the apples, carrot, celery, and cabbage in a large salad bowl.

Step 5

In a small mixing bowl, whisk together the lemon juice, olive oil, maple syrup, Dijon mustard, salt, and black pepper to create the dressing. Taste and adjust seasonings as desired.

Step 6

Pour the dressing over the apple and vegetable mixture, and toss gently until everything is evenly coated.

Step 7

If using, sprinkle chopped parsley and raw sunflower seeds over the salad for garnish and added texture.

Step 8

Serve immediately or refrigerate for up to an hour to let the flavors meld further. Enjoy!
