Ingredients

  • 1 cup Semolina (Rava)
  • 0.75 cup Sugar
  • 0.5 cup Ghee (Clarified Butter)
  • 0.25 cup Grated Coconut (fresh or desiccated)
  • 0.25 cup Milk
  • 0.5 teaspoon Cardamom Powder
  • 2 tablespoons Cashews (chopped)
  • 2 tablespoons Raisins

Directions

Step 1

Heat 2 tablespoons of ghee in a large pan on medium heat.

Step 2

Add the semolina (rava) and roast it on low to medium heat while stirring continuously. Cook until it turns golden brown and aromatic. This should take about 8-10 minutes.

Step 3

Add the grated coconut to the roasted semolina and continue to stir for another 2-3 minutes. Remove from heat and let it cool slightly.

Step 4

In the same pan, heat 1 tablespoon of ghee and roast the cashews and raisins separately until golden brown. Set them aside.

Step 5

In a blender or food processor, blend the sugar into a fine powder. Add the powdered sugar to the cooled semolina mixture.

Step 6

Add the cardamom powder, roasted cashews, and raisins to the mixture. Mix well.

Step 7

Warm up the milk slightly and add it gradually to the mixture, stirring continuously until the mixture reaches a slightly sticky consistency. Be careful not to add too much milk as it should hold together but not become overly wet.

Step 8

Take a small handful of the mixture and shape it into a round ball (ladoo) using your palms. Continue until all the mixture is used.

Step 9

Allow the ladoos to set at room temperature for 1-2 hours. Once set, they can be stored in an airtight container for up to a week.
