Ingredients

  • 250 grams All-purpose flour
  • 150 grams Unsalted butter (cold, cubed)
  • 50 grams Granulated sugar
  • 1 teaspoon Salt
  • 60 milliliters Cold water
  • 150 grams Raspberry jam
  • 1 large Egg (beaten, for egg wash)
  • 20 grams Powdered sugar (for dusting, optional)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.

Step 2

Add the cold, cubed butter into the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Gradually drizzle in the cold water, mixing with a fork or your hands until the dough comes together. Do not overwork the dough.

Step 4

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 1 hour to chill.

Step 5

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 6

Remove the dough from the refrigerator and roll it out on a lightly floured surface into a rectangle approximately 12 inches by 10 inches (30 cm x 25 cm).

Step 7

Spread an even layer of raspberry jam over the surface of the dough, leaving a 1-inch (2.5 cm) border around the edges.

Step 8

Starting from one of the long sides, carefully roll the dough tightly into a log. Pinch the seam to seal, and place the log seam-side down.

Step 9

Using a sharp knife, slice the log into 12 equal pieces, about 1 inch (2.5 cm) thick. Place the slices cut-side up on the prepared baking sheet.

Step 10

Brush the tops of the swirls with the beaten egg for a golden finish.

Step 11

Bake in the preheated oven for 18–20 minutes, or until the swirls are golden brown and slightly puffed.

Step 12

Remove from the oven and allow to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 13

Dust the cooled raspberry swirls with powdered sugar, if desired, before serving.
